The food truck “La roulotte de Sillery” arrives every lunchtime in a different location in Quimper (all addresses can be found on their Facebook site).

In addition to the excellence of its burgers and daily specials, the concept is unique in Finistère: it is an inclusive food truck created by the Sillery foundation, which has a company adapted to it in Quimper.

There are two of them in charge of the kitchen and the tandem works wonderfully.

Already awarded among other food trucks in France, in May they will receive another national distinction from a major gastronomic guide.

But they are not allowed to say more at the moment...

It was in July 2022 that Jean-Christophe Prouhézé, general director of the Sillery foundation, based in Épinay-sur-Orge (Essonne), had the idea of ​​this inclusive food truck.

The foundation is oriented towards disability and its adapted company in Quimper specializes in quality control of packaging, whether for luxury perfumes, lighters, or corks.

He then contacted Christophe Maguet, a professional chef, who was preparing to take a sabbatical year.

“When I learned that they couldn't find a chef for their food truck, I decided to take part in this adventure.

» In January 2023, a truck coming from the North is specially equipped.

Christophe meets his new colleague, Yves, 52, an employee of the adapted company, with a mental disability, who has already worked in the kitchens of Papillons Blancs in Concarneau.

“Patience and tolerance” for motto

Christophe is the chef and Yves, his assistant.

Their motto?

“Patience and tolerance are our daily life”.

They even put this quote on their counter.

“We ask people to respect our pace.

“We of course favor fresh and local products.

I start at 5 a.m. by preparing dishes in a laboratory built in the adapted company.

Today, for example, it's a chicken blanquette with bacon and Noilly-Prat.

As for Yves, he started working on the potatoes at 8 a.m.

» The duo gets along wonderfully.

Favorite of the Food-Truck Festival jury

Last September in Saint-Maur-des-Fossés (Val-de-Marne) he took part in the Food-Truck Festival which brought together the best food-trucks in France over three days.

They faced each other in a competition whose godfather was Nancy's great chef Charles Coulombeau.

The latter awarded the “Roulotte de Sillery” the Coup de cœur prize.

“We focused our preparations on creativity.

Trout and fresh ginger had to be used as ingredients.

I am an artisan smoker so I have smoked trout myself.

We made spider crab rillettes with smoked bacon, sweet spices, with a buckwheat crumble and smoked trout.

From Monday to Friday, every lunchtime, Christophe and Yves entertain around sixty people from their truck.

“In the near future, we will try to develop evenings and weekends,” they promise gourmets.
