The ski season is slowly coming to an end, but the memories of the mountain hut fun in the Austrian and Bavarian mountains remain.

What could be nicer than sitting in a cozy hut after a long day on the slopes, listening to the tiled stove crackling and munching on a big rösti casserole or fried potato soup?

You don't even want to start talking about the sweet pastries that our neighboring country has to offer because they will make your mouth water.

But every now and then it can be a piece of cake.

Preferably one that can be mixed together quickly and without scales.

In keeping with the Hüttengaudi theme week, she has developed a very special recipe for an Almdudler cake.

The cake is moist and fluffy and has a fruity-tart taste that is perfect to enjoy with a glass of chilled herbal lemonade in a ski hut in the mountains or simply at home.

For a quick Gugelhupf with Almdudler flavor you need these ingredients:

Batter:

  • 4 eggs

  • 2 cups sugar (400g)

  • 1 cup neutral oil (180 g)

  • 3 cups flour (420 g)

  • 1 packet of baking powder

  • 1 cup Almdudler (200 g)

Almdudler casting:

  • 250g powdered sugar

  • 3-4 tbsp Almdudler

The preparation is uncomplicated and quick:

The fluffy dough with the subtle Almdudler note and the creamy icing conjure up a smile on every face.

  • Preheat oven to 160 °C fan oven.

    Grease a Bundt cake tin and dust it with flour.

  • For the batter:

    Beat the eggs and sugar in a bowl until fluffy.

    Stir in the oil in a thin stream.

  • Mix the flour and baking powder and stir into the egg mixture alternately with the Almdudler.

  • Pour the dough into the bundt pan and bake in the preheated oven for 50 minutes.

    (Make a stick test).

  • Remove, let cool and turn out of the mold.

    These tips will help you remove the cake from the tin.

  • For the icing:

    Mix the powdered sugar with a little Almdudler until a thick mixture is formed.

    Spread the icing over the cooled cake and serve.

  • Simple Tasty Tip:

    A standard coffee cup with a capacity of around 200 milliliters was used for the recipe.

    If you don't have a cup at home, use the kitchen scales.
