That the chef has obtained the total confidence of the owner of the only Michelin-starred restaurant in Val-de-Marne should make gourmets want to try the new restaurant which has just opened its doors in Saint-Maur-des-Fossés.

After six months at L'Ours in Vincennes and a year at Les Mérovingiens in Noisy-le-Grand (Seine-Saint-Denis), still under the direction of Jacky Rigault, Simon Flaouter decided that it was time to open his own restaurant.

A childhood dream comes true for the 30-year-old with Le Brouard, a restaurant with 40 seats and a private terrace in summer.

Located in a quiet area of ​​Saint-Maur-des-Fossés, the new restaurant is named in homage to Pierre Brouard, baker from the chef's village, who looked after him like a grandfather and bequeathed him part of his inheritance.
