In her 200 m2 workshop in Louviers, she 3D prints cakes and other sweet and savory tart bases.

She is Marine Coré Baillais, “born in the east of France but Norman at heart”, who set up her suitcases and her food grade stainless steel 3D printer in the Hub nursery in Louviers (Eure) in September 2022.

An invention which allows the business leader, founder of Digital Pastry, to combine her experience in 3D printing and her love of pastry and which attracts investors.

To convince the jury, composed in particular of Tony Parker, Jean-Pierre Nadir and Kelly Massol, Marine was able to benefit from the advice of Pierre Hermé.

The famous pastry chef, after opening the doors of his workshop to her, accompanied her on set to defend the digital pastry project.

“His teams helped us design a cake that was as telegenic as possible,” says the founder.

And to better educate investors about her product, there’s time for practical work: “I made them get their hands dirty before asking them to put their hands in their wallets,” she smiles.

Save time and reduce packaging

“Our objective is to support chefs who work large hourly volumes and struggle to recruit,” explains Marine.

The idea is innovative.

On the racks of the cold rooms are lined up mini-casseroles and other kitchen utensils in dinette version and much more artistic or large-format creations.

Thanks to 3D printing adapted to food products, digital pastry makes it possible to make original edible containers.

Among its first clients, it counts pastry chefs who set up shop and seek to stand out with products that cannot be found elsewhere, because 3D printing makes it possible to create tart bases that could not be made by hand. , or with a lot of time invested and attention to detail, but also to meet very current anti-waste needs.

The founder designates one of her colleagues and a chef who works on savory preparations in the workshop's kitchen: “We have requests from caterers for sweets or containers, like bowls, which can be edible and compostable. ".

After leaving the 3D printing start-up Sculpteo in 2018, Marine trained in baking by completing a CAP and invested 90,000 euros to create the prototype of her 3D printer.

Adapted to professional food containers, the machine will create shapes by combining dry foods, cocoa flour, sugar with liquid foods contained in the nozzle.

In a few minutes, the tart bases are sculpted before being put in the oven for one hour at 150°C.

Today accompanied by 9 employees, Marine Coré Baillais hopes to raise 1 million euros and will thus be able to apply for the “First factory” program of the BPI (public investment bank).

While waiting to raise the sum, Digital Pastry continues to assemble machines, very soon for the CFA Raphaël Mallard in Le Havre, its first Normandy client, and to receive chefs and trainers to discover the process.

“I dreamed of having a workshop teeming with people,” she breathes.
