A native of the country, Fabrice Idiart prepares “family cuisine” in this old mansion which evokes his memories of his youth spent in this land which is dear to him, “small, just-fried trout” like his grandfather made with chicken. Sunday roast, through the salsa verde fish of the festive meals in Urepel or the timeless and so deliciously regressive rice pudding.
