Like a pianist rehearsing his scales, David Jacquot never stops making and remaking his pizza dough every day, in search of an excellence that he will greatly need.
On March 13 and 14, he will be the only representative of Oise among the 130 competitors in the French Pizza Championship.
A test he knows well.
“This is the fifth time that I have been selected, you must first pass the regional qualifications to be able to participate in the French Championship,” specifies the pizza maker from Essuiles-Saint-Rimault.
In Rémérangles, Les Marais, Luchy, Allonne and Tillé, the pizzas he concocts in his truck La Roue Gourmande have long won over the residents who eagerly await his weekly visit.
“It’s 100% homemade, the dough of course, but also the sauces and toppings.
Everything is made with local products, and if possible organic,” explains David Jacquot with pride.
