When Yannick Alléno sees red, he invents a cuisine in Saint-Émilion in harmony with the surrounding vines which essentially produce wine of the same color.
Installed in 2021 at the head of the Table de Pavie, restaurant of the hotel of the Perse family, owner of Château Pavie (first grand cru classified A), he is very lucky.
Firstly, the house is beautiful, it has enjoyed an undisputed reputation for a long time and is ideally located in the heart of Saint-Émilion, a postcard village.
Above all, Alléno found a pair there who supported his predecessor, Ronan Kervarrec (now based at his home in Saint-Grégoire, near Rennes, a highly recommendable house): the two Sébastien, Faramond and Nabaile.
They are the ones who run the shop, the first for the savory, the second for the sweet.
If the style of the world-famous maestro is immediately identifiable, the two friends have too much talent to duplicate…
