A new stand will open at the Augsburg city market at the beginning of May.

The concept?

Everything vegan!

Tim Dietrich is Elvie's new tenant.

His daughter inspired him when naming it.

Augsburg – sandwiches, muffins and small tarts.

The pasta is all vegan and will be part of

's range .

The latter in turn is the name of the new stand at the Augsburg city market, which will open its doors in May.

The sale will be a vegan bakery and pastry shop.

He is moving into the former “Irena’s City Market Specialties” stand.

Tim Dietrich knows what else is behind

The 47-year-old is a trained chef and master chef and is starting his third self-employment with a stand at the Augsburg city market.

He and his wife already ran a good, middle-class restaurant, which he had to close due to the Corona challenges.

Selling at the Augsburg city market will then become his main job, Dietrich tells the editorial team.

Nutritional awareness, ability to pay and a young audience as the “potential” of the city market

“I see potential in the Augsburg city market,” explains the father of the family in an interview.

He applied for a stand for the second time - now it worked.

He appreciates the nutritional awareness and willingness to pay of the Augsburg city market audience, and there are also many young buyers.

Since agreeing to the stand, Dietrich has already started a number of renovations: “I actually redid everything.”

Everything from the electricity to the interior design has been renovated.

“From documentary to documentary, I got more into the vegan diet”: Dietrich lives vegan himself

With his range, the 47-year-old would like to appeal to everyone who already lives a vegan lifestyle or is interested in a vegan diet.

Dietrich has been following a vegan diet for some time.

“I was looking for anti-inflammatory foods for pain.

From documentary to documentary, I got more into the vegan diet,” he explains to the editorial team.

With his stand he also wants to offer certainty that all products are actually vegan - in many catering establishments this is often not known.

from his daughter: “Our daughter’s favorite doll is called Elfi.

We changed the name slightly and used the v as a reference to vegan.”

“Basically, I’m positive about the start,” explains Dietrich.
