After reselling their Pantin (Seine-Saint-Denis) brewery in 2022 to the giant Heineken, the two former co-founders of the Parisian artisanal beer Gallia, Guillaume Roy, 39 years old and Jacques Ferté, 40 years old, are embarking on a new entrepreneurial adventure. .
They had relaunched a forgotten brand of beer, this time they decided to bring up to date... chicory, Proust's oldest madeleine.
Marketed under the Cherico brand, this organic drink with caramel notes will be one of the new stars of the Paris café festival, which is being held at the Carreau du Temple (IIIe) from this Saturday, March 9 and until Monday.
It is starting to be distributed at the Pavillon des canals along the Villette basin (19th century), at the Marlette coffeeshop on rue des Martyrs (9th century), in coworking space bars and soon in Arkose climbing gyms.
At the Paris café festival, the curious will be able to taste it in three recipes, plain, in a latte with oat milk or in a “nola” version, based on coffee, chicory and milk, inspired by New Orleans.
