Simply Tasty editor Sandra has dared to tackle the ultimate baking myth that has been floating around the internet for years: 100-hour brownies.

These brownies promise a particularly intense taste experience thanks to a long resting period of several days.

But is the effort really justified?

Sandra did the test and baked the brownies with and without waiting time.

  • Brown butter:

  • 225g butter

  • 2 tbsp espresso powder

  • 30 ml coffee, cold

  • Brownie batter:

  • 4 eggs

  • 1 tsp vanilla extract

  • 450g sugar

  • 45g cocoa powder

  • 1 tbsp salt

  • 225 g dark chocolate (72% cocoa), melted

  • 215 g wheat flour

  • 100 g milk chocolate, chopped

  • 270 g dark chocolate (72% cocoa), chopped

  • For the brown butter:

    Melt the butter in a saucepan and heat until the butter turns brown.

    Remove from heat, stir in a tablespoon of espresso powder and add cold coffee (even better: coffee ice cubes) to stop the butter from browning.

    Set aside and let cool to room temperature.

  • For the brownie batter:

    Beat the eggs together with the vanilla extract and sugar until creamy and whitish.

  • Mix the cocoa powder, remaining espresso powder and salt and sift into the egg-sugar mix.

    Fold in carefully.

  • Add cooled, melted butter and melted dark chocolate.

  • Also sift the flour and stir in until a homogeneous dough forms.

    Fold 100 grams each of coarsely chopped whole milk and dark chocolate into the dough.

  • Pour the batter into a brownie baking pan (23 x 23 cm) lined with baking paper and smooth it out.

  • Sprinkle with remaining chopped chocolate.

    Cover the baking pan tightly with cling film and let it rest in the fridge for three days.

  • Preheat oven to 180 °C fan oven.

  • Pour the brownie dough from the refrigerator directly into the oven, removing the cling film first.

    Bake for 45 minutes until the top of the brownies feels firm and there are slight cracks.

  • Remove the brownies from the oven, close them tightly with aluminum foil and let them cool in the freezer for another 30 minutes.

  • Cover tightly with cling film again and then let the brownies rest in the fridge for another 24 hours.

  • Cut into pieces and warm in the oven or microwave just before serving, if desired.

  • Easy Tasty Tip:

    The baking time for the brownies may vary depending on the size of the baking pan.

    If the edges come away from the mold, the brownie batter in the middle still wobbles when you shake the mold and the core temperature has reached at least 75 °C, nothing stands in the way of juicy brownie enjoyment.

    The original recipe comes from former Buzzfeed Tasty Senior Producer Alvin Zhou, who runs a popular YouTube channel dedicated to delicious recipes with over 1.4 million subscribers.

    His recipes usually focus on a long preparation time in order to maximize the taste and intensity of the aromas.

    Whether it's ramen, tiramisu or lasagna, Alvin is sure that good things take time.

    “I rarely make brownies, but when I do, I take a lot of time with them!

    Brown butter soaked in espresso, two types of chocolate, frothy beaten eggs and iced coffee make them particularly rich and extremely juicy and soft.

    The juicy brownies, which the American video producer estimates took around 100 hours to prepare, have been viewed more than 7.7 million times since they were published on YouTube.

    There are now over 13,000 comments on the recipe video.

    On average, everyone praised not only the aesthetic video itself, but also the recipe, which was copied by a surprising number of people.

    To find out, Sandra quickly prepared the dough again without waiting and brought both versions to her colleagues in the office to try.

    The result of the taste test was astonishing: both the 100-hour brownies and the quick-baked version were well received by colleagues.

    Everyone agreed that both versions were delicious, chocolaty and a direct ticket to food coma.

    However, there was no significant difference in taste.

    Whether you really have to bake the 100-hour version is a matter of taste.

    If you are looking for the ultimate brownie treat and have time, you are welcome to try the recipe.

    For everyone else who likes it quicker and less complicated, the variant without waiting time is a good alternative.
