  • 4 egg yolks

  • 100g sugar

  • 1 packet of vanilla sugar

  • 200 ml milk

  • 200 ml cream

  • 1 tsp vanilla extract

  • 1 tsp lemon juice

  • 1 pinch of salt

  • Optional: chocolate shavings or cocoa powder, for garnish

Preparing non-alcoholic eggnog is so easy:

  • Place the egg yolks, sugar and vanilla sugar in a heatproof bowl and beat with a whisk or hand mixer until fluffy.

  • Heat milk in a saucepan, but do not let it boil.

    Slowly pour the warm milk into the egg mixture, stirring constantly.

  • Return the egg mixture to the pot and cook over medium heat, stirring constantly, until the mixture thickens slightly.

    Attention: The mixture must not boil, otherwise the eggs will congeal!

  • Remove the pot from the heat and add the cream, vanilla extract, lemon juice and salt.

    Mix well until all ingredients are well mixed together.

  • Pour the eggnog into clean bottles or glasses and let it cool completely in the refrigerator.

  • Before serving, cool the eggnog well and garnish with chocolate shavings or cocoa powder if desired.
