  • Stay away from the can:

    Soaking and cooking the dried chickpeas takes a little time, but the effort is worth it.

    A little baking powder or baking soda in the cooking water can speed up the cooking process and soften the legumes.

  • The peel has to go:

    When you cook the legumes with baking powder, the delicate skin of the chickpeas already settles on top of the water and can be skimmed off with a spoon.

    Using chickpeas without shells or skins plays an important role in the consistency of the hummus.

  • Open sesame:

    Tahini has a permanent place on the hummus ingredient list, and sesame paste should not be skimped on.

    So that it can develop its full aroma, you should definitely use high-quality tahini with a high sesame content.

  • Ice cream, ice cream, hummus:

    The hummus is pureed into a delicious dip using a powerful blender; you can also add a few ice cubes.

    The ice cream gives the hummus an incredibly creamy texture.

  • 250 g dried chickpeas

  • 125g tahini

  • 3 tbsp lemon juice

  • 2 cloves of garlic

  • Salt, to taste

  • 2 ice cubes

  • some cold water, if necessary

  • 1 tbsp olive oil, for garnish

This is how you can prepare hummus step by step:

  • Clean dried chickpeas under running water, then place in a large bowl and cover with water.

    Allow legumes to soak overnight.

  • Drain and rinse the chickpeas.

    Simmer in a pot of fresh boiling water with baking powder for about 25 to 40 minutes until soft.

    Skim off the skin and foam that floats to the top.

  • Drain the chickpeas and briefly puree them in the food processor.

    Add tahini, lemon juice, garlic cloves and salt and puree until creamy.

    Meanwhile, add ice cubes and continue to puree.

    Add some cold water if necessary. 

  • Place hummus in a bowl and garnish with olive oil.

    Serve with fresh bread and enjoy!

  • The combination of hummus and bread is delicious every time. In the pan it becomes a hummus flatbread with broccoli.

    A double load of chickpeas is no problem either; the vegetarian spinach falafels end up in your mouth in one bite.
