Today, out of more than 15,000 restaurants listed in the 39 international editions of the guides, only a little more than 350 restaurants are awarded a Michelin Green Star.

In 2024, nine new restaurants were rewarded: the opportunity to put France and its terroir at the center of the plate.

In Indre-et-Loire, not far from Chinon, Ligré is a haven of history and greenery.

This is how, not far from the town of Rabelais, chef Martin Bolaers took the helm of the restaurant Les Jardiniers last fall.

”, particularly through the 5,000 m2 of vegetable garden and twelve hectares of truffles.

In the heart of Pas-de-Calais, Bermicourt stands out for its discreet elegance, embodied by its castle, a former 19th century hunting lodge.

The latter, with its refined architecture, is a vibrant testimony to local history.

It was the headquarters of the British Tank Corp during the First World War, then occupied by the Germans during the Second.

In addition to the prestigious museums and emblematic avenues, the 16th arrondissement of Paris is a haven of peace thanks to the Bois de Boulogne, the green lung of the capital.

This vast green space invites you to relax, take walks along the water and discover hidden gardens, thus offering a natural break in the heart of urbanity.

This Relais & Châteaux is also a bubble of calm and serenity with 5000 m2 of gardens magnified by the talented landscaper Xavier de Chirac.

In the kitchen of this bucolic refuge, recently named to replace Julien Dumas, the young chef Grégory Garimbay proves, with his gourmet sauces and worked acidities, that he perfectly masters the grammar of the best gastronomy.

10 minutes from Angoulême, Dirac, a little gem of the Charente, seduces with its calm and natural beauty.

The landscapes of this region, with their gentle hills and vast expanses of greenery, are a call to discover a rural and authentic France.

Dirac offers a true green tourism experience, where walks in the forest and bike trails in the heart of the vineyards are essential.

A few minutes away, the Domaine de Chatelard benefits from a natural setting that is exceptional to say the least, with a 10-hectare lake and a thermophilic forest populated with holm oaks, now recognized as a Natural Area of ​​Ecological Fauna Interest. and Floristics.

In the kitchen, the chef from Denmark, Ivan Gotfredsen, sublimates local products, has his own saffron plantation and picks wild plants from the undergrowth which harmoniously complement the dish.

Narbonne, the ancient Roman capital, is a crossroads of history and nature in Aude.

The town is crossed by the Robine canal, a UNESCO world heritage site, which offers magnificent opportunities for walks along the banks or gentle cruises.

Lovers of green tourism will also appreciate the proximity of the Saint Lucia regional nature reserve and the wild beaches of the Mediterranean.

On the road which leads from Narbonne (15 minutes by car) to Narbonne-Plage (5 minutes), we make a gourmet stop at Château l'Hospitalet.

The hotel, a former hospice run by monks in the middle of vineyards, has one asset: The Art of Living.

This excellent restaurant is run by Laurent Chabert, a rather very gifted chef who is second to none when it comes to cooking Grussian eel from the Ayrolle pond, or stuffing morels.

Perpignan, city of art and history, is an open door to Catalan culture, with its historical monuments and its living traditions.

It is surrounded by varied landscapes, from the beaches of the Vermeille coast to the orchards and vineyards of Roussillon, offering a multitude of outdoor activities.

The region invites you to discover the natural and cultural heritage, by bike or on foot, under the generous southern sun.

But not only.

It’s also an opportunity to meet a plant enthusiast.

Already awarded a star in the Michelin Guide, chef Christophe Comes is authentically invested in his vegetable gardens and his collections of citrus fruits and olive trees.

On the plate, the vegetal note is essential from start to finish: the bitterness of the romaine salad is twisted with a dash of lightly peppered nasturtium oil, and accompanied by Irouléguy trout, while the holy -pierre, its reduced bouillabaisse, candied fennel and rouille, is enhanced by eminently present vegetable flavors.

It is a privileged destination for those who wish to immerse themselves in the tranquility of green spaces and the gentle way of life of the South-West.

The surrounding area, dotted with hiking trails and natural sites, is a call to escape and rediscover a preserved nature.

In an old Toulouse house from the 18th century, in the center of the village, the starred chef Sylvain Joffre keeps his promise: his fresh, subtle and fragrant cuisine is born as if “

Fifteen minutes south of the center of Alès, Saint-Hilaire-de-Brethmas, a charming village in Gard, is a perfect example of the rich natural and historical heritage of the region.

Between fragrant scrubland, olive groves and Roman remains, the village offers an idyllic setting for escapades in the great outdoors, combining cultural discoveries and relaxation in the heart of lush Mediterranean nature.

Moustiers-Sainte-Marie, clinging to its star in the Alpes-de-Haute-Provence, is a gateway to the splendors of the Verdon.

This village is an architectural gem, nestled in a spectacular natural setting.

The nearby Verdon Gorges, with their turquoise waters and dizzying cliffs, are a paradise for lovers of water sports, hiking and green tourism, looking for strong emotions and breathtaking panoramas.

It is also here that a handful of artisans continue the history of one of the largest centers of earthenware production of the Grand Siècle.

There were all the ingredients here to make ceramics: abundant water and wood, clay soil.

In the kitchen, Adrien De Crignis, barely 30 years old, is in charge of this table where vegetal notes reign supreme thanks to a garden of more than two hectares where all kinds of vegetables, flowers and aromatic plants flourish.
