Returning only in autumn: Felix Skofitsch is closing Bistro M1 for the summer.
He brings his cocktail skills to the Schliersee lido in the warm season.
The wish: from 2025 both should run in parallel.

Bistro M1, which opened just ten months ago, will remain closed all summer - the staff.
But the operations manager found an alternative: he switched to the lido.
Schliersee - With a delay - partly due to the corona pandemic - the bistro M1 opened in the center of Schliersee in the spring of last year.
Now, not even a year later, it's closing again - or taking a longer break.
Only in October will guests be able to enjoy cocktails and creative cuisine again.
Chef Felix Skofitsch can be found at the Schliersee lido throughout the summer.
Of course not as a guest, but rather he is responsible for the drinks there.
The chef changes, the waitress goes on the ship
As is so often the case, it is also the lack of staff that prompted Skofisch, who runs the bistro together with his mother Eva, to take the step.
“A few things came together,” says the junior.
Felix Skofitsch says he just wanted to get involved in the lido.
Finding a replacement for himself as operations manager of the M1 was difficult.
In addition, the cook goes back to the courtyard house on the lake, and a waitress gets hired on a ship for the summer before she returns in the fall.
So: close first.
“It’s a compromise,” emphasizes Skofitsch.
The start was successful: “It went great”
The M1 has certainly proven to be an enrichment in Schliersee's gastronomic landscape.
The reviews on the Internet range from very good to exuberant, and the operator is also apparently satisfied.
“It went really well, 90 percent of the regular guests were locals,” says Eva Skofitsch.
They will now have to wait until October.

Felix Skofitsch was approached by pool operator Lutz Schwenn.
“I’ve known him since he was a child,” he says.
The vacancy at the lido is simply explained by the departure of Schwenn's business partner Tom Loch.
“This has been planned for three years,” says the former.
Loch also said goodbye to gastronomic retirement for health reasons.
Skofitsch will primarily be behind the bar on the lakeshore and will be responsible for the drinks.
This may sound strange to outsiders, but on summer evenings the lido is more of a bar than a bath.
Enjoying a sunset there is probably one of the things you have to do in Schliersee - for example with a glass of the in-house (plus Lantenhammer) invention Ginchilla in your hand.
Skofitsch brings a lot of expertise with him.
Before the M1, he learned bar skills at the Seehotel Überfahrt in Rottach-Egern.
And before that he was a chef in one of the top addresses in Austria: the Trofana Royal, a five-star superior hotel in Ischgl.
Skofisch will initially work as an employee at the lido.
“We’ll see how things go for a year,” says Schwenn.

Skofitsch himself can definitely imagine a long-term commitment to the lido - without the M1 closing every summer.
There is enough time to prepare this by 2025.
