The little scrambled egg muffins taste best when they are still warm, but their sweet counterparts are quickly forgotten. Who needs chocolate or lemon flavor when you can also have hearty bread dumplings or fresh lemon pasta muffins? Cheers to the muffin tin, which can also be used to make quick scrambled eggs.

For the simple scrambled egg muffins you need the following ingredients:
1 small onion, diced
1 small red pepper, diced
1 tbsp butter
50 g bacon in strips
6 eggs
125 ml milk
Salt
pepper
50 g grated cheese
This is how the savory scrambled eggs are prepared in the muffin tin:
Preheat oven to 180 degrees top/bottom heat.
Sauté the diced onion and peppers in the hot butter in a pan. Add the bacon strips and sauté briefly.
Mix eggs, milk, salt and pepper in a bowl. Mix in the grated cheese and the vegetable-bacon mixture and fill in portions into the greased wells of a 12-cup muffin tin.
Bake the scrambled egg muffins in a hot oven for about 15-20 minutes until the eggs have set. Complete!

A quick look in the fridge can determine what goes into the muffins. Leftover mushrooms that didn't fit on the homemade pizza, or perhaps some fresh feta left over from last dinner, complement the eggs perfectly and, cut into small pieces, they also find a place in the muffin tin.
