Before cooking, asparagus should be thoroughly washed and peeled. The exception is green asparagus – it does not need to be peeled. Always peel the asparagus from head to end using a special asparagus peeler or knife. Cut off hard, woody ends. You can find the right spot by carefully bending the rod to the natural breaking point.
