After numerous rumors, it was finally Arnaud Faye, currently working at Chèvre d'Or, a two-star restaurant in Èze, who replaced him. The 45-year-old leader will officially take office on May 20.
Like his predecessor, he will supervise the three-star Epicure, but also the high-end brasserie 114 Faubourg (1 star), Café Antonia, banquets, room service and the bread, cheese, pasta and chocolate workshops set up by Frechon.
It is therefore up to the native of Clermont-Ferrand, Meilleur Ouvrier de France,
to “exalt wonderful classics with a touch of modernity”
, in the words of the palace.
