After fourteen years, Philippe Mille left the Domaine Les Crayères restaurant, crowned with two Michelin stars under his reign, to open his restaurant in Reims. Arbane bears the name of a rare local grape variety, a sign of the attachment of this Sarthois to his adopted region.
“In this 19th century building, the decoration combines the strong elements of the country: chalk, roots, cork, stained glass, etc., without forgetting the cellar and its 700 champagne references. I want to deploy my DNA there, based on local products. The ground floor opens onto the kitchen, and not the other way around, to create a real exchange with the room. Sharing is essential. This is why I love Sunday lunch with the family so much. We place a casserole on the table, with a beautiful tender shoulder of lamb, cooked gently in the oven, deglazed with champagne, accompanied by small new vegetables.
