This is how wild garlic gnocchi is prepared in just a few steps:
Cook the potatoes with their skin on in boiling salted water in a large pot for about 20-25 minutes until they are soft.
Peel the potatoes and mash them finely with a fork or potato masher. Let cool for ten minutes.
Wash the wild garlic leaves thoroughly, pat dry and chop finely.
Mix the flour, eggs, salt, pepper and nutmeg into the potatoes and knead into a smooth dough. Also briefly knead in the wild garlic.
Form the gnocchi dough into ropes about two centimeters thick on a lightly floured work surface and divide them into two centimeter wide pieces.
Place each piece of dough on a lightly floured fork and roll it down using light pressure with your finger to create the typical grooves. Place the gnocchi on a floured work surface.
Cook gnocchi in a large pot of boiling salted water until they float to the surface.
Melt the butter in a large pan and toss the wild garlic gnocchi in it. Serve with grated Parmesan if desired and enjoy.
