Hype about “Bavarian kebab”: The meatloaf version is followed by two other varieties

A different kind of kebab: Marco Cakmak has recently started offering three different Bavarian kebabs. In an interview, he reveals how he came up with this idea and when he will open a shop in Munich.

Tirschenreuth ‒ “I’m a meatloaf and bratwurst fan myself,” explains Marco Cakmak in an interview with our editorial team. However, the meat loaf is often cut too thickly for him. “And since I have a kebab shop, I thought we could also do it as a kebab.” So he started selling the first Leberkäs kebab in November 2023. In addition to the classic kebab ingredients, sweet mustard, pickles and cabbage are added to the homemade flatbread. Since then, the whole thing has been available for six euros in his shop in Tirschenreuth in Upper Palatinate.

Cakmak already caused a lot of media hype back then; he described his idea as a “new food trend”. Now comes the next kebab hit: He starts selling two more Bavarian creations. “It was planned that way from the beginning,” assures the Turkish native on the phone. With the Leberkäs kebab he wanted to see how a Bavarian kebab was received by customers. Since April 10th, visitors have also been able to order a white sausage or bratwurst kebab.

Cakmak is proud of his three skewers, “they taste really great,” he assures us. He now offers all three varieties with veal so that everyone can eat them. “Many of my compatriots don’t eat pork.” His goal is to combine Bavarian and Turkish cultures.

So far the creations have been well received by his customers, but some are stubborn and don't dare to test the Bavarian kebabs. “They said bratwurst and meatloaf belong in the roll.” According to Cakmak, the fact that there are different opinions is a good thing. After all, he still has the classic kebab.

Bayern kebab soon also in Munich: “There also with vegan versions”

Cakmak has big plans: snack bars with Bayern kebabs in Munich and Berlin are to follow. He wants to open in the state capital before Oktoberfest, probably at the end of August. “There I only concentrate on the Bavarian kebab”, in addition to the veal version, but also in vegan form. “Here in Tirschenreuth, with 9,000 inhabitants, I can count on my hands how many are vegan.” So a vegan Bavarian kebab wouldn’t be worth it there. It's different in the big city, believes Cakmak.

However, his Bayern kebabs in Munich won't cost six euros like in the Upper Palatinate. “I’ll have to charge a little more because everything is more expensive there.” At the start of sales, he wants to start with a one-cent campaign, just like in Tirschenreuth, on April 10th. Cakmak plans to sell his kebabs for one cent at certain times throughout the first week.

He has already registered patents for all creations, for the three meat variants and the planned vegan options. “Many kebab shops call and ask for a license so that they can produce the skewers.” For now, Cakmak wants to go his own way.
