How to cook shredded or shredded bondiola
This is
one of the most used cooking methods when it comes to bondiola.
The entire bondiola weighs between approximately one and a half and two kilos, depending on the age of the animal. To ensure that the cooking is undone,
it must be braised.
This means that it will be cooked in a
liquid medium, covered, at a low temperature, for a long time.
So that the internal juices do not escape,
we first proceed to seal the piece
in a deep pot or plate, over high heat, with fatty matter that can be any kind of oil, butter, fat, etc. Once the entire piece is sealed, it can be
salted and seasoned to taste.

In order to fill it, it is first necessary to hollow it out. You can
make the famous “pocket”
by placing the knife on end and inserting it without reaching the end, making gentle movements on the sides, forming the bag.
Another option is to cut it parallel to the base
without reaching the end so that you have a kind of flap. Then, turn the piece and make another cut to form a kind of hole where you can put the filling and then cover it with the first flap made.
In both cases,
it must be bridled or tied with thread so that it does not open
during cooking. Before putting it on the grill you can paint it with chimichurri, Provençal sauce or whatever marinade you like best.
