It's a ritual that has been going on for decades and always begins with an omelette. The one served very early with coffee, maroilles and sugar tart. It is concocted “Chez Françoise” in Troisvilles (North), just before the entrance to the first paved sector of Paris-Roubaix.
It is there, a few days before the start of the race, that the spirit of the Hell of the North can truly be savored. In this establishment in the north of France, the strange feeling of visiting a loved one always hits you. Between the wedding photos of the children and the photos of the grandchildren, the organizers introduce themselves around the table. We eat just before driving through the paved areas in order to inspect them and possibly ask for some final touch-ups to ensure the safety of the runners.
