Cucumber, yogurt and mint soup, tomato stuffed with quinoa and pickles, peppermint and basil gazpacho and no-oven cheese and peach cake, our weekly menu will keep you cooler than air conditioning.


How hot is it these days, right? With these temperatures, the sun increasingly melts our ideas, but even so we have been able to think one more week of a very fresh menu for summer survival. Monday August 10

COLD CUCUMBER, YOGURT AND MINT SOUP

Cold Cucumber Yogurt Soup is a summer classic in the Middle East and the Balkan countries. Dish of Jewish tradition, as is logical it is taken in multiple versions: this is half classic, half invented.

VEAL TONGUE 'TONNATA'

If you like offal but don't really know how to take it during the hot months –when the spoon is reserved for gazpacho–, sign up for this quick, simple and very fresh version of 'vitello tonnato'.

SAUTEED BANANA WITH COLD AVOCADO CREAM

Avocado is used as a fruit in half the world and as a vegetable in the other half. In El Comidista we must be right on the meridian between one half and the other, because we hit both. Today it is his turn to be sweet and accompany the banana.

FIG, FETA AND ROSEMARY SALAD

Many fruits, especially sweet ones, combine well with feta cheese, which is perfect for salads due to its salty taste and its ease of crumbling. Figs are no exception, as this recipe shows that they are a breath of fresh air for the palate.

PASTA WITH SARDINES AND PINIONS

If you don't buy the first pasta you find in the supermarket, or the cheapest, the simplicity of this dish can lead you to glory. You only need some sardines in oil, some pine nuts and parsley.

CANTALOUPE

The melon is your friend during the summer and if it smells, weighs and the base gives a little when squeezed, it is supposed to be good. But it is not an exact science.

SUMMER CANNELLONES (NO MILK, NO OIL AND NO PASTE)

Doesn't it happen to you that when it starts to get one of those heat that makes your cheeks flare up, your body starts screaming "give me salad" at every meal? It can be in the form of a traditional salad - vegetables cut and dressed, come on -, deconstructed (a gazpacho or cold soup) or, as in this case, turned into cannelloni without milk, oil or pasta.

TOMATOES STUFFED WITH QUINOA AND PICKLES

The tomato in summer reaches its maximum splendor. It is in this season that you can enjoy your ideal point and take advantage of it in dishes as simple and rich as this one.


PEARS IN WINE

A classic dessert - not old - to take advantage of those beautiful pears that are now in the greengrocers.

CORTEZAS 'OF FRESH CORN WITH BUTTER AND LIME

A different way of eating fresh corn on the cob with the guarantee stamp of chef David Chang, where the fried cereal is very light thanks to the citrus touch of the lime.

CRAB CHILI

One of the most representative dishes of the gastronomy of Singapore, changing the king crab for the national crabs but keeping the tasty sauce that gives meaning to everything.

PEACH

They are soft, tender, juicy and very aromatic when they are at their optimum. If you get bored of eating them alone you can always click on the link and try some of the recipes.

GAZPACHO WITH HERBABUENA AND BASIL

If there are two aromatic plants capable of cheering up and giving life to any dish, they are peppermint and basil, so you don't have to let your imagination run wild to realize the explosion of flavor that awaits us when taking this soup. Enjoy!

'KINILAW', THE PERUVIAN CEVICHE

Cevicheros and cevicheras here you have your favorite recipe this summer, a dish that could be the Philippine version of anchovies in vinegar.

CHEESE AND PEACH CAKE WITHOUT OVEN

They raise the thermometers and we leave the use of the oven for September. Until then, nothing better to sin than a fresh cheesecake, with seasonal fruit and zero sweat.

SICILIAN CAPONATA

The 'caponata di melanzane' is one of the great classics of southern Italian cuisine. We have tried several recipes, but none as good as this one.

They are juicy, they are good, they are in season and they can be eaten alone or in combination. There is no fault.

Sunday August 16

ROASTED CHICKEN WITH FRESH PLUMS

We take advantage of the plum season to use them in a savory recipe with juicy chicken thighs. You can put potato, sweet potato or serve it on a base of rice or couscous: you will succeed for sure.

MERENGADA MILK

We rescued another summer soda to cope with the heat. The traditional –and a bit forgotten– meringue milk should triumph for its flavor of rice pudding and its texture of frozen foam.

The weekend drink

COLD CHOCOLATE WITHOUT MILK

While a well-made classic chocolate shake is unbeatable, sometimes it is too filling. Here you have this more refreshing version, capable of satisfying the addiction to cocoa, but eliminating milk and sugar as cowburristic elements.
