Kalpotti is a French delicacy, rich in cream and eggs with very little flour similar in texture to baked pudding or flan.

prepares end-of-summer kalpotti and combines forces between yellowish nectarines and purple and sour plums that will be covered in the baked ceramic shell.
Since the calpotti is not exactly a cake, but more of a custard or pudding (in standard Hebrew it sounds less stimulating, but the taste is still divine), it is recommended to bake it in heat-resistant personal dishes, or in a large round pan that can be served in the center of the table.

Ingredients
For summer fruits:
2 nectarines
2 plums
1 tablespoon heaped sugar
For the Kalpotti batter:
1 egg
2 egg yolks
Pinch of salt
½ Cup sugar
200 ml for 38% sweet cream
2 tablespoons sour cream
1 teaspoon vanilla extract
Lemon zest (about half a lemon)
⅓ Spelled spelled flour
50 grams of butter to grease the molds

Preparation
How do you make nectarines and plums?
1 Preheat oven to 175 degrees.
2 Coarsely chop the prunes and nectarines, put together in a bowl and mix well with a heaping tablespoon of sugar until the fruit is shiny and drains a little liquid (about 2 minutes).

Bake immediately in the hot oven for about 25 minutes until slightly golden and set, but until vibrating in the center.
Sprinkle over powdered sugar and serve.
