Arais is a pita filled with a meat mixture that is roasted on the grill, on a pan and even in a toaster. Meir Adoni took the arais and turned it, as only he knows how, into a light dish rich in flavors.

The filling replaces chopped fish seasoned with fennel seeds and coriander. The plump pita, which does not match the delicacy of the fish, is replaced by a thin Druze pita.
