Agar-agar is a powder made from blue or red algae. It binds water and thus ensures that the jam gels.

As a result, it not only replaces the unhealthy sugar, but also gelatine - and is therefore vegan. Pectin is also a vegan gelling agent. It is found in almost all plants, it is particularly highly concentrated in apples. Many manufacturers already use apple pectin as a substitute for gelatin. When opened, the jam can be kept for about seven to ten days without jam sugar.
