Agar-agar is a powder made from blue or red algae. It binds water and thus ensures that the jam gels. As a result, it not only replaces the unhealthy sugar, but also gelatine - and is therefore vegan.

Ingredients for agar-agar jam:

  • Fruits, such as strawberries, oranges or apples
  • 1 g agar-agar per 100 g of fruit – that's about 1 teaspoon for 500 g of fruit
  • some lemon juice
  • possibly spices such as vanilla or cinnamon
  • possibly a sweetener

How to cook sugar-free jam:

  • Wash the fruit, cut it into small pieces and cook for 5-10 minutes with lemon juice and spices
  • Puree fruit
  • Bring the fruit to a boil and stir in the agar-agar with a whisk
  • Then pour the hot jam into sterile jars. When opened, the jam can be kept for about seven to ten days without jam sugar. Therefore, it is advisable to always use only small jars. Or you can freeze your jam.

  • Cook with the lemon juice and vanilla for 5-10 minutes
  • Then stir in the pectin
  • Refrigerate in sterile jars
  • The pectin jam also does not have as long a shelf life when opened as the variant with jam sugar. Therefore, use it up as soon as possible!

    Jam without sugar – but still sweet

    Fructose alone is sweet – but it doesn't make jam sweet enough for most people. If you want to give your fruit spread a sweet note, but do without table sugar, you can use other ingredients: In addition to honey, coconut blossom sugar is a delicious alternative. Agave syrup or rice syrup are also popular. The best thing to do is to try out several variants and find your personal favorite.
