The slow growth in the number of shops in France (+0.7% between 2013 and 2019), "or even its decrease in rural areas and isolated cities", is accompanied by "a change in the structure of the sector" which benefits "bars and restaurants more", explain economists Marie-Laure Allain and Anne Epaulard.
