In 2020, the Michelin Guide introduced the Green Star, a distinction dedicated to chefs and establishments committed to a sustainability approach. In 2024, nine new restaurants were rewarded: the opportunity to put France and its terroir at the center of the plate.

Out of more than 15,000 restaurants listed in the 39 international editions of the guides, only a little more than 350 restaurants are awarded a Michelin Green Star. For this 2024 vintage, the “Rouge” awarded 9 restaurants across France with a green star for sustainability.
