Raulito Basuk is a chef and owner of a paladar in Havana's Vedado neighborhood. He says that Cuban food does not exist, because it is not being cooked in the national pot.

Basuk says that today he does not see “la jama” as he saw it a long time ago. “I’m still learning to understand the jama thing,” she says, referring to the word used in Cuba to name food. "I wanted to create a Cuban cuisine restaurant, a Paladar. That's Grados, it's a palate."
