Philippe Mille left the Domaine Les Crayères restaurant, crowned with two Michelin stars under his reign, to open his restaurant in Reims. Arbane bears the name of a rare local grape variety, a sign of the attachment of this Sarthois to his adopted region.

“In this 19th century building, the decoration combines the strong elements of the country: chalk, roots, cork, stained glass, etc., without forgetting the cellar and its 700 champagne references,” he says.
