The aromatic substance coumarin is only very low in concentration in Ceylon Cinnamon. There is evidence of an interaction with antihypertensive agents and possible effects on insulin levels. Pregnant women and children should also consume cinnamon in moderation. Increased consumption of cassia cinnamon can lead to, among other things, headaches, vomiting or a racing heart. The Federal Institute for Risk Assessment advises not to consume more than two grams per day.
