The traditional recognition of the paved sectors of Paris-Roubaix has been going on for decades. The ritual always begins with an omelette, served very early with coffee, maroilles and sugar tart.

It is there, a few days before the start of the race, that the spirit of the Hell of the North can truly be savored. We eat just before driving through the paved areas in order to inspect them and possibly ask for some final touch-ups to ensure the safety of the runners.
