three basic ingredients
plus pasta water * and salt and you get a "grown-up" version of good old
butter noodles
that is light and has a hint of alcohol.
Dry white wine, a piece of butter and nutty Parmesan
together make a
light sauce

Recipe for pasta sauce with just three ingredients
Quantities for 2 servings:
230 g pasta of your choice
120 ml of dry white wine
2 tbsp butter
1/2 teaspoon salt
45 g grated parmesan cheese

White Wine Sauce Recipe: How to Cook Three-Ingredient Pasta Sauce
Bring a large saucepan of salted water to a boil.
Add the
pasta
and cook al dente according to the instructions on the packet.
Skim off 120 ml of the
cooking water
into a cup, then pour off the noodles and let them drain well.
In
a large pan,
bring the
wine
to a simmer over medium heat.
Let it simmer for 1 to 2 minutes, until it is reduced by half.
Add the pasta water you set aside,
butter
and
salt
and bring everything back to the boil.
Pour the noodles in and fold them into the sauce.
Take the pan off the heat and stir in the
parmesan
.
Serve immediately.
You can of
course add other ingredients to
this
white wine
sauce: vegetables or grilled chicken or pork cut into pieces.
