Are you looking for a simple and delicious dish that goes down well everywhere (barbecue party, at home, or garden party) and fits perfectly into the zucchini season?
Congratulations, you found it!
And with lots of protein and hardly any carbohydrates, it also fits perfectly into a low-carb diet.

That's how it's done:
You only need a few ingredients:
rolls:
2 zucchini
100 g Parma ham, sliced
Filling:
50g feta, crumbled
40 g shallots, diced
150 g mozzarella, diced
1 tbsp lemon juice
2 tbsp olive oil
0.5 tsp salt
0.5 tsp pepper
The preparation of the delicious rolls is so easy:
Preheat the oven to 180°C.
Wash and trim zucchini.
Using a vegetable peeler, peel long strips from the zucchini.
For the filling:
In a bowl, combine the feta, shallots, mozzarella, lemon juice, and olive oil.
Season with salt and pepper.
For the rolls:
place a slice of Parma ham on each zucchini strip.
Spread 1 tablespoon of cheese filling evenly on top and carefully roll up from the short side.
Place the rolls close together, open side up, in a casserole dish.
Bake for about 15-20 minutes, until the zucchini is cooked through and the ham is browned.
