Imagined by Philippe Starck, the bohemian chic address is back in service under the leadership of Juan Arbelaez.

The chef keeps the rotisserie, which sends the scent of roast free-range chicken to the adjoining antique galleries.

We can also try the glazed and roasted fennel or the monkfish, which grills as well as meat, with garlic and lemon.

Designed as a bourgeois family house, Sapristi plays with its various cozy spaces… When it reopens, everything will take place on the terrace, more classic but sufficiently vegetated to be out of sight.

As for the dishes, a generous cuisine that boasts a comforting classicism.

The pea velouté goes well with a burratina accompanied by croutons and fresh fruit is invited for dessert, accompanied by coulis and gourmet meringues.

Cybèle Idelot is originally from San Francisco.

From her California market garden, the chef has kept the locavore spirit and simple, no-frills cuisine.

The vegetables come from her vegetable garden in the Yvelines, where she opens another restaurant as well as a guest house alongside her Boulonnais restaurant.

The chef's idea is to build a living kitchen on a daily basis according to arrivals, also campaigning for anti-waste.

The dishes change but the taste is always there.
