The government announced earlier that in less than two months, more than 80 citizens had been infected with invasive beta-streptococcus. Some patients may have wounds on their hands while handling uncooked freshwater fish, or they may have contracted the infection by eating uncooked freshwater fish.

In addition to streptococcus beta, eating raw or undercooked fish is also at risk of infecting parasites.

Once a young girl ate the sashimi, she also ate the anisakis worms hidden in the sashimi; the live worms wriggled in the stomach and penetrated into the stomach wall, causing her stomach to suddenly suffer severe pain.

People who like to eat salmon and other raw fish should be careful.

A girl who eats fish with stomach pain forceps out anisakis one centimeter long

Anisakis parasites in marine fish such as salmon, mackerel, and squid. If you eat raw or undercooked fish or fishery products with the worm, you may be infected.

Earlier, a woman in her 20s and a friend ate fish sashimi at a restaurant and felt severe stomach pain more than an hour later.

She sought a doctor for gastroscopy, and found that a live Anisakis nematode in her stomach was squirming and burrowing into the stomach wall, causing her very pain.

But when the anisakis worm, which was about one centimeter long, was clamped out for her, the pain quickly subsided.

Anisakis can burrow through the intestine and cause peritonitis

Anisakis in fish is mainly due to insufficient freezing temperature or time. According to the Code of Practice for Fish and Fishery Products of the Codex Alimentarius Commission, under normal circumstances, fish for raw consumption should be frozen at minus 20 degrees Celsius or below for 7 days, or Freezing at minus 35 degrees for about 20 hours can kill the parasites in the fish.

Huang Tianyou reminded the public that eating fish is at risk of contracting Anisakis.

After eating marine fish with Anisakis, Anisakis enters the stomach first, and then has the opportunity to penetrate into the duodenum, small intestine or large intestine.

Because the outer shell of Anisakis is very thick, stomach acid cannot kill it; the nymphs burrow through the stomach or intestines, which can cause severe peritonitis, and may also cause intestinal congestion or appendicitis.

Some patients develop urticaria due to the allergic reaction of worms in the body, which can cause anaphylactic shock in severe cases.

Because Anisakis worms pass through the oropharynx, some people may feel the position of the oropharynx is like a needle prick.

However, Anisakis does not lay eggs in the human body.

There have been cases in foreign countries where there are many Anisakis nematodes in the patient's body, "too many worms can't come out," some of them may have penetrated into the intestines, requiring surgery and taking anthelminthic medicine.

Many people feel unwell after eating raw fish, and they don't take it seriously. They think that it is "eating raw and cold and comfortable." Delaying medical treatment may cause more serious problems such as peritonitis.

People who feel a sudden severe pain in their stomach within 1 to 8 hours after eating raw fish, or feel severe abdominal pain within 5 to 7 days may be infected with Anisakis.

Nymphs burrow into the intestines and can cause diarrhea or blood in the stool; fever may indicate inflammation in the body.

Anisakis susceptible to thick-cut fish

Many shops use thick-sliced raw fish as a solicitation. Theoretically, Anisakis can be seen with the naked eye, but if it is hidden in the thick-sliced raw fish, it may not be seen.

However, it does not mean that the risk of eating thick sliced fish is higher. The most important thing is that the fish undergoes a proper freezing process.

Eating immature carp fillets can be infected with Chinese liver fluke

Another parasite infected by eating fish is the Chinese liver fluke.

The cystic larva of Chinese liver fluke mainly parasitizes freshwater fish such as carp and bighead fish. The worm can block the bile ducts, inflame and even cause bile duct cancer.

In the past, many people were infected by eating raw carp fillets with the worm. Since the ban on the sale of Chinese sashimi in Hong Kong, the number of cases has decreased, but there are still many people who have been infected by eating undercooked carp. Especially when eating carp congee or a side stove, "simmer the fish fillets and eat them" to prevent the fish from being rough and tasteless. In fact, there is a risk of infection.

Studies have pointed out that a 1mm thick fish fillet with cystic larvae of Chinese liver fluke can kill the worm if placed in hot water at 90 degrees Celsius for one second; if the hot water is 75 degrees Celsius or 60 degrees Celsius, they need to In 3 seconds and 15 seconds, the worms on the fish fillet will die.

"However, ordinary fish fillets are not as thin as 1 mm, so they must be cooked well."

Roasted pork is popular nowadays. There will also be carp fillets in it, so remember to cook it well.

The public must bear in mind that wine, vinegar, Japanese mustard and spices cannot kill parasites.
