(ANSA) - ROME, MARCH 04 - Record year for FinocchionaIgp, the queen of Tuscan cured meats, which closed 2021 with a production of over 2 million kilograms of bagged dough, i.e. 1 million and 92 thousand pieces produced, recording an increase of 22 , 7% in the second half of the year compared to the same period of the previous year.

Numbers that testify the effectiveness of the enhancement work expressed by the Protection Consortium and of the added value given by the recognition of Igp since 2015 to the typical Tuscan salami, an example of how this peculiarity is representative and identity of its territory of origin.

Over 248 thousand kilograms more were bagged in 2021 than in 2020 (+ 20.88%).

In addition to bagging, 2021 also marks time on other fronts: 1,723 have been certified.

Therefore, Finocchiona IGP represents a sharply increasing market for Tuscan salami factories with a value of over 12.9 million euros in production and a value of 22.4 million in sales.

"In 2021 we launched the biodiversity maintenance initiative thanks to the purchase and installation in the Tuscan countryside of beehives for pollinating bees, which we will want to follow up again this year".
