The sausage category is problematic in terms of image.

This is a wide range of products.

While dietitians recommend consuming pastrami, for example, as part of a low-fat diet, they oppose consuming other types of sausages such as salami, kabanos and more - which contain high concentrations of fat and salt.



But not only the health, but also the mentality.

Consumption of meat in general and sausages in particular is low in Israel compared to European and North American countries, from which we have copied quite a few of our consumption patterns.

If the sausage in its various forms is part of a classic breakfast for a resident of London or New York, then for us Israelis it does not really connect - and not just for kosher reasons.

What has changed in the last two decades is the variety: if we once knew some types of pastrami and two common types of salami such as "tea" or "cognac", then immigration from the former Soviet Union, where there is a tradition of eating canned meat - including sausages for the most part, contributed To enrich the variety.



Initially in dedicated and non-kosher stores that appealed mainly to the Russian sector, but the effect also radiated to the Israeli consumer, from non-kosher Israelis, who purchased sausages from other meat in chains such as Tiv-Taam, and later to kosher meat producers who had to diversify their products to compete.

Deli or packaged?
