Egg mayonnaise at 2 euros, mashed sausage at 13 euros, average age of the teams 25 years old. At the head of two Parisian restaurants, Nouvelle Garde revisits the standards of the brasserie and makes investors salivate. Launched in 2019 by two thirtysomethings, Charles Perez and Victor Dubillot, the company completed a fundraising of 10 million euros, financed by two funds: Experienced Capital and, to a lesser extent, FrenchFood Capital (present at Thierry Marx, La Boulangerie, Les 2 Marmottes, etc., the latter having entered the capital last year. Experienced Capital (Dynamo, Oh My Cream, Soeur, etc.) thus becomes the second shareholder, alongside the founders. These 10 million euros, which are added to the 3 million previously raised, should make it possible to open around fifteen restaurants in France and abroad, within five years.
