A moment after they have finished their preparations for Passover - and with the producers and suppliers of meat products, the preparations for the Independence Day barbecues are already in full swing, with everyone trying to renew and upgrade the offer.

"We collaborate with well-known chefs in a limited edition product collection only for the BBQ holiday. The idea is to combine current trends in the culinary world and connect them with our excellent cuts," says Eran Livni, CEO of the Merindo boutique chain.

-What does the limited edition include?

"Chef Raz Rahav from ocd restaurant created recipes for burgers with a special seasoning: grilled hamburgers and spicy burgers (NIS 89 per kg).

Chef Einav Azgouri from the 'Imperial' group added two new kebabs: Turkish and Romanian with very contemporary flavors (NIS 89 per kg).

Chef Tomer Tal from 'George and John' created two types of barbecue skewers: lamb skewers in mint marinade , Pomegranates and a Hindu date (NIS 139 per kg), and skewers from a sheitel skewer (NIS 149 per kg). NIS 28.90 per package) - which are very suitable for all types of meat and of course for the fire ".

According to Livni, the limited edition will be launched from April 25 until after Independence Day and out of stock.

There are also deliveries from the north to the Arava.

"First of all, the Israeli consumer has changed a lot," he says.

"In the last two years we have seen it very strongly. The consumer knows what he wants, he understands rationing, he also understands quality and varieties, and it challenges us as suppliers and manufacturers of products to be as good as possible.

The Israeli consumer also discovered many pieces that were quite dormant: "Sheitel and more. We saw it very strongly in Corona. People had a lot of time to be interested in culinary."

Livni adds that there are also many groups on social media today that focus on meat.

"For example, we have a group on Facebook, 'The Bashrists', which has a lot of knowledge, recipes, competitions, ideas, photos of dishes. There is a lot of sharing information related to meat. It is important for us to be constantly updated."

At the sausage level

"We are seeing more and more people being exposed to the special things, and there is a demand for it," says

Uzi Fattal, owner of Cancun, a company that manufactures, imports and markets meat, fish and seafood products

.

The company's products are manufactured in a factory in Modiin and marketed to restaurants, writers and hotels throughout the country.

Cancun also has three spacious stores in Modi'in, Ashdod and Rishon Lezion.

"For example, we do not work with calves but only with carts, because the meat quality of the cart is much better," says Fattal.

"We also market Wagyu meat, which is the premium premium, and make complementary meats like hamburgers and sausages. We have greatly upgraded the level of sausage in Israel.

First of all, we grind real meat without any additives. We also have sausages in different flavors: Cheddar sausages. , Truffle sausages, a special sausage called 'carnivores' - which is 50 cm long ".

"We have a huge variety for barbecues, with special items such as Denver Kat Wagio, Iron Steak Wagio, Asado Wagio snacks, Picnic Wagio. There is also a cart fillet of the Srola variety. Prices will range from NIS 79 per kg for flavored sausages to NIS 399." C. Entrecote Wagio ".

There is nothing to worry about in terms of supply, Fattal promises, "there will be no shortage. We always have an abundant supply, because we are a manufacturing plant. By the way, I also suggest trying shrimps on the barbecue. People make shrimp skewers on the marinade barbecue, and this is a growing phenomenon."

According to data from the Research, Economy and Strategy Division of the Ministry of Agriculture and Rural Development, in 2021 meat consumption per capita in Israel was 19.6 kg per year, an increase of 50% in about 6 years, compared to 2015. In 2021, meat consumption per capita in the countries The OECD stood at 14.4 kg per year, about 5 kg less than the average per capita in the country.

According to OECD data, Israel is in fourth place in the world, one place after Brazil, the giant of the cattle export industry.

In first place is Argentina with a per capita meat consumption of 36.9 kg per year, followed by the United States with a consumption of 26.1 kg of meat per capita.

Intermediate: This year they will celebrate more

"In preparation for Independence Day, where there is a tradition of barbecues and barbecues, there is of course an increase in consumption. In terms of everything related to meat, this is a celebration," says

Guy Bliss, VP of marketing for the Hinawi Wine & More chain

. , We're back to normal, and I guess the intensities will be great.

I even expect an increase of about 50% compared to the previous Independence Day. "The

Hinavi Wine & More chain has 10 branches throughout the country, with five of them - in Tel Aviv, Rishon Lezion, Airport City, Hod Hasharon and Nof Hagalil - offering premium butchers. Bliss also Notes that the demand for special cuts has been rising in recent years, "especially in this period when more people are celebrating the BBQ."

Among the meats that can be found in the chain's butchers: Porter House, Tomahawk, Tibon steak, Golan Heights entrecote, Golan Heights sirloin, lamb chops, butchers' portion, lamb skewers, special kebabs, steaks on bone that have been aged for 30 days, and more.

For Independence Day, there will also be special kits.

For example, a package that includes half a kilo of entrecote, 1 kg of spicy kebab, 450 grams of spicy hot dogs, 1 kg of chicken skewers, plus a 250 ml beer 250 ml (San Miguel) - starting at NIS 299.

According to

Liat Giller, vice president of marketing for Zoglowek

, on Independence Day this year, an increase in sales of products on fire is expected.

"We expect an increase of over 20% in meat and sausages compared to last year," she says. "

What special products are expected in the run-up to the holiday?

"

They come in a variety of flavors and are suitable for preparation both on the fire and in the pan.

Among the sausages: 'Cankers' (German-style sausage, made of chicken and turkey with a delicate texture), 'Bockwrest' (German-style, made from a combination of turkey and beef and seasoned in the best German tradition), 'Spanish' (Spanish-style hot sausage, made from India and beef) ".

The price of the premium sausage series is about NIS 21.90 per package, with two new flavors added for the holiday: "French" (French-style chicken and turkey sausage, with mustard seeds and nutmeg), and "Cariverst" (Berlin-style chicken and turkey sausage, with curry seasoning ).

"In the last two years, courtesy of the Corona, the entire online market has jumped forward, and this has also affected the meat market," says

Chen Raziel, CEO

of the Cow Farmers ' Farm

Refresh the BBQ

"At our meat site, it is fresh Israeli and there is also the option of ordering a type of personal rationing," says Raziel.

"You write in the order whether you prefer the entrecote of one size or another, whether you want the minced meat in this or that tahini, just as if you were standing in front of the butcher in the butcher shop."

At the moment, the shipments reach the area between Hadera and Ashdod and also Jerusalem.

After the holidays there are plans to expand the distribution areas.

Aside from the usual and familiar things you’ll find on the site, “we also offer uncommon chunks, which are hard to come by,” Raziel says.

"For example, Iron Plate Stack (NIS 169.90 per kg), with which you can refresh the barbecue.

In Australia, by the way, which is a meat country, over 30% of people eat these steaks at home.

We also have Denver Cut Steak on the site (NIS 149.90 per kg) - a slice of oil with a very juicy taste. Those who prefer low-fat can buy a front fillet (NIS 219 per kg).

We see that awareness of meat cuts and the knowledge that customers have is growing.

If once people's knowledge was limited to entrecote and kebab, today the awareness is much greater, and meat consumption in Israel is also increasing year by year.

The problem today is not awareness but supply.

The specialty flavors are not found everywhere. "

We will not disappoint the meat-tasting enthusiasts either, who in practice avoid consuming meat. The Israeli startup Wonders of Nature, supported by the Zoglowek company and engaged in meat substitutes, offers a series that includes five products NIS 50, sale for May): Wonders Burger, Wonders Mini Kebab, Wonders Chorizo, Wonders Margaz, Wonders Substitute Minced Meat.

The products are based on peas, soy, cocoa butter, carob, beetroot, tomato lycopene and dietary fiber, among others.

"Consumers around the world are looking for advanced meat-based meat alternatives, and express a desire to connect to the social, nutritional and environmental revolution of the meat substitutes industry. After nearly three years of development we offer these consumers an impressive and varied menu Says Wonders CEO Ronit Davidovich.

Especially ahead of the BBQ holiday and following the launch of its products at dozens of selected butchers, the Israeli food technology company "Redify Meat", which aims to achieve texture, taste and juiciness like animal meat using technology and plant raw materials, launches a "new meat" package that does not contain animal components.

The package includes coolers with a package of Redifine Premium Burger (2 units), a package of Redefine hot dogs (5 units), a package of Redefin kebab with lamb flavor (6 units), a waffle and tongs for a barbecue for NIS 119.90 by pre-ordering on the Redfin-Meat website (redefinemeat.com) .

The distribution will take place at designated collection points in a wide spread starting on April 29.

"Now that we have started selling our products for the first time for home preparation at a number of butchers in the country, we have made great efforts to also allow online purchases through our website ahead of Independence Day in a wide spread, to allow as many people as possible access to the products," says Eshhar Ben Sheetrit.

"It is amazing that at the upcoming BBQ holiday, the most Israeli and meaty holiday there is, everyone will be able to enjoy new meat for preparation at the home barbecue with family and friends."
