Baked salmon with rhubarb and asparagus: the ingredients

For 4 people you need:

  • 1 bunch of green asparagus

  • 300 g rhubarb

  • 3 tbsp olive oil

  • 2 tbsp maple syrup

  • salt

  • pepper

  • 1 organic lemon

  • 4 salmon fillets, 200 g each

  • Vegetable oil for frying

  • Chilli powder

Recipe for fried salmon with rhubarb and asparagus

  • First, cut off the woody ends of the asparagus and peel the lower third.

    Peel the rhubarb and cut it into pieces about 6 inches long.

  • Preheat the oven to 200 ° C top / bottom heat.

  • Pre-cook the asparagus spears in salted water for 2 minutes and then rinse them in cold water.

  • Put the rhubarb and asparagus in a baking dish, season with olive oil, maple syrup, salt and pepper.
