Ingredients

    • 3 eggs

    • ¼1 cups sugar (250 g)

    • ¾ Olive oil (140 g)

    • ¼1 cups almond powder (125 g)

    • Delicate Italian polenta flour + 2 tablespoons (125 g)

    • 10 g baking powder (two teaspoons)

    • 2 oranges

Preparation

How to make a kosher orange cake for Passover?

  • 1 Cook one orange whole in a pot with water until boiling.

    Filter the water because of the bitterness, and boil again with more water.

    As soon as it boils, remove from the heat, strain and refrigerate.

  • 2 After cooling, grind in a food processor and add juice from the remaining half of the orange.

    Set aside.

  • 3 Beat the sugar and eggs until an apple foam forms.

    Slowly add the olive oil until completely incorporated.

  • 4 Add all the dried and ground oranges until combined.

    Let the mass rest overnight in the refrigerator (about 12 hours).

  • 5 Grease two small English pans and place in the contents of baking paper.

  • 6 Slice the remaining half of the orange into thin slices and arrange on the bottom of the pan.

    Pour over the batter.

  • 7 Bake at 160 degrees for about 50 minutes.
