Schnitzel without meat?
This recipe does not use meat substitutes, instead it is made with delicious vegetables.
Not only vegetarians like it.
Celeriac is not the best-known vegetable, as it is often sold in bundles for soup greens along with carrots, leeks and parsley.
But
celeriac
can do even more!
The tuber contains a lot of iron, calcium, magnesium and various vitamins.
For example, it can be processed into a delicious puree or makes a delicious
vegetable
side dish .
But not only that: the root vegetables can also be the main actor on the plate in the form of
schnitzels
be transformed.
Due to its spicy taste and firm structure, it is an excellent substitute for meat.
Simply pre-cook, bread and fry like meat slices.
The vegetarian pleasure is ready.
The good thing: Even if the main season for celery is in the cold season, it is still available in Germany all year round.

1 celeriac
1 pinch of salt
80 grams of flour
1 egg
80 g breadcrumbs
vegetable oil

Recipe for celery schnitzel: This is how meatless schnitzel succeed
First peel the celery root, cut it into finger-thick slices and cook them in a pot with water until al dente (about 5-7 minutes).
Drain the celery, rinse in cold water and pat dry.
Salt the slices.
Prepare a
breading line
: Put the flour, a beaten egg and the breadcrumbs separately in a deep plate.
First dust the celery shavings with flour, then dip them in the beaten egg and then coat them all over with the breadcrumbs.
Heat the oil in a large pan and fry the celery shavings on both sides until golden brown.

You can serve all the
side dishes
that go well with "normal" schnitzel with the celery schnitzel: from pasta and rice to potato variants such as fries or fried potatoes.
There are also a variety of possible vegetable side dishes, in winter Brussels sprouts, carrots or a nice lamb's lettuce go well with it.
A dip also tastes good with the spicy vegetarian schnitzel.
