When you hear the words "cheesecake," what's the first thing that comes to mind? Cream? Cream cheese? Butter? Milk? It's all true, but it turns out it's possible otherwise: "Anyone who tastes my cheesecake is sure there's cheese there."

Meet Ira Stroz, who is a different kind of pastry chef. The delicious desserts she prepares are made from all-natural ingredients, without sugar or white flour. It uses only whole wheat flours, natural, high-quality sweeteners and no butter or cream, resulting in special, tasty, low-calorie cakes suitable for those who follow a healthy and proper diet and want to eat something sweet. In addition, Ira prepares vegan and gluten-free cakes and desserts, without compromising on taste, and offers desserts based on vegan chocolate made from quality cocoa.

Ira's connection to the world of healthy desserts began several years ago. "I decided to start eating healthier," she says. "I started removing white sugar and white flour from my diet because I wanted to lose some weight and feel better about myself. I changed my whole diet to a healthier diet and when I felt like something sweet I didn't know what to do. So I went online and started making all kinds of recipes I found, but they weren't good. And then the decision was made to do them myself."

Ira, at that time working in the world of marketing, decided to study the world of healthy desserts from the beginning. She enrolled in an online course, learned the basics, and continued to take additional courses – vegan desserts, gluten-free desserts, quality cocoa chocolate desserts and more – until she felt ready and opened her new business during the coronavirus pandemic.

"After quite a few courses, the desserts I finally prepared were delicious and successful," says Ira. "I enjoyed every minute and received a lot of compliments. I felt that I succeeded, not only were all the desserts beautiful and impressive, they were also very tasty. At that moment, I decided to quit my previous job and put my all into the new business."

Like any new business, Ira's start was not easy. "It's a little hard for me to advertise myself," she admits. "But thankfully today I have regular customers who love my cakes. I've been to all kinds of exhibitions and events and got to meet quite a few people and customers."

What is your dream?

"When I started, I would eat everything, and over time I became vegan," says Ira. "Although I still make dairy desserts, my dream is that the business will only be vegan, even though I have customers of all kinds, including diabetics."

What are your most sought-after desserts?

"I have a vegan cheesecake that doesn't feel like it's vegan at all. Anyone who tastes it is sure there is cheese there, but it is based on cashews. The personal desserts I make are also in high demand."

Where do you see your business 5-10 years from now?

"I hope he will be very successful," she concludes. "I want to run different workshops, such as making vegan or gluten-free desserts, in addition to the workshops I run today, such as a chocolate workshop."
