Always this unexpected Montmartre street, this intriguing origami decor and, for two hours, facing the chef, this tasting close to hypnosis where the hand as the blade lays on the lacquer and the ceramic a goldsmithery of nigiri.

The rice here is lukewarm, sensual, heady and sustains the marine insolence of brill, sea bream, tuna, eel, mackerel… Sushi in its entirety, orchestrating an appetite as powerful as the wave.
