"Tartar is actually a dish of chopped fresh fish or beef to which ingredients are added that compliment their natural taste," explains the chef of the Safra restaurant in Rehovot, Benny Madar.
What cuts of beef tartare are made from?
"Usually when it comes to cattle, fillet tartare is made – a part found in the back of the cow. To choose the right share - consult the butcher you trust. In order to make tartare, we will ask for the beef in the form of fillets." Madar adds: "If you don't want to chop at home, you can ask the butcher to chop tartar."

Components
For the preparation of beef tartare:
80 g chopped beef fillet on the
knife <> tablespoon chopped chives <> tablespoon red onion chopped into small cubes

Method of preparation
Mix all the ingredients in a bowl and season
with olive oil, lemon juice and fine salt
To make white eggplant cream:
1 small burnt eggplant, peeled
1 clove of garlic

<> tsp. honey

Preparation of tartlet:
Cigar leaf dough
Frying oil
Method of preparation
Cut a circle 10 cm in diameter from cigar leaf dough.
Arrange in a mold a jagged metal tartlet (so you can get into frying).
Fry in deep oil (along with the pan) for half a minute.
Assembly:
Arrange the tartar in each tartlet and on top of it decorate dots with white eggplant cream and black eggplant cream.
