Cauliflower is one of the most fun and delicious vegetables on the plate.
You can eat it fresh as it is, cook it, roast it in the oven, fry it or make meatballs from it - it is simply wonderful in any way.
This time I chose to roast it in the oven in a layer of spiced yogurt, which adds both a great Mediterranean flavor and a wonderful golden color.
You will see that even before it reaches the table as a side dish or salad, it will already be grabbed as a snack and disappear.
I recommend serving it with a green salsa of herbs, lemon garlic and hot pepper that makes it even more festive.

Cauliflower flowers in yogurt
Ingredients
For cauliflower:
1 large cauliflower, broken into medium florets
1 tablespoon coarse salt
Boiling water, to cover the cauliflower florets
For the yogurt coating:
200 grams of natural flavored yogurt (at least 3 percent fat and preferably more)
1 egg
1 crushed garlic clove
½ tsp paprika
½ teaspoon ground black pepper
½ teaspoon of salt
1 teaspoon cumin
Olive oil
For the herb salsa:
1 bunch of cilantro
2 garlic cloves
1 hot pepper
¼ cup olive oil
1 teaspoon of salt
¼ lemon including the peel, without seeds
3 cherry tomatoes

Preparation
How do you make roasted cauliflower with yogurt?
1 Place the cauliflower florets in a large bowl, sprinkle with coarse salt and pour boiling water until the florets are covered.
Set aside for half an hour.
2 In the meantime, heat the oven to 190 degrees.
Line a baking tray with baking paper and grease it with olive oil.
3 Mix the yogurt coating ingredients in a large bowl.
Wash the cauliflower florets in tap water, dry well with a paper towel and mix with the spiced yogurt.
4 Place the coated cauliflower florets on the greased pan and spray with oil spray on top or brush a little.
Bake for about 35 minutes until brown.
5 In the meantime, put all the salsa ingredients in a food processor and grind in pulses.
Taste and adjust seasoning as needed.
6 Serve the roasted cauliflower florets with the yogurt alongside the salsa.
