The Consumer Council took a sample of 15 types of chicken essence products on the market earlier and found that the prices of each brand vary greatly, ranging from 11.75 yuan to 133 yuan per serving, but the most expensive Ma Bailiang's "Sixteen Degrees Extra Thick Boiled Chicken Essence" and the most affordable Brand's "Original Chicken Essence" both received five-star overall ratings from the Consumer Council.


In terms of nutrition testing, each brand also has its own advantages and disadvantages. Ma Bailiang’s “16-degree super thick boiled chicken essence” has cholesterol detected, but its protein content and total branched chain amino acid content are the highest; Tian Yuanxiang’s “Original Chicken Essence” has a lower iron content. Ranked first, but its protein content is the lowest.

It is worth noting that the protein content of a skinless chicken thigh is as high as 15.8 grams per serving, which is more than double that of other chicken essence products.


The Consumer Council recommends paying attention to the actual amount of food consumed each time and comparing product prices, carefully reading the ingredient lists and nutrition labels on the packaging, and choosing products with lower sodium content as much as possible according to personal eating habits.

In April last year, the Consumer Council collected samples of 15 more common types of prepackaged traditional chicken essence, chicken essence, boiled chicken essence and vegetarian essence of chicken essence from health product chain stores, health food specialty stores and food departments of department stores, and commissioned an independent laboratory to carry out Chemical and nutritional testing.

According to the test results, the price, serving size, protein and total branched chain amino acid content of different brands vary greatly. Portions are priced at 38.25 yuan. Ma Bailiang’s “Sixteen Degree Super Thick Boiled Chicken Essence” sells for 798 yuan per box, with an average asking price of about 133 yuan per pack; Brand’s “Original Chicken Essence” sells for 188 yuan per box, with an average of 11.75 yuan per bottle. The total ratings of the three models were all five-star, and another seven models still received five-star overall ratings.

Vita Green "Original Chicken Essence" contains aflatoxin but not exceeding the standard

The test results showed that no hormones were detected in all samples, but aflatoxin was detected in Vita Green "Original Flavored Chicken Essence" (0.2 micrograms per kilogram), but it still complies with the current Hong Kong Regulations on Harmful Substances in Food " (the permissible maximum concentration of bisfuranoxatanones in other foods shall not exceed 15 micrograms per kilogram) and the "Hazardous Substances in Food (Amendment) Regulations 2021" which will come into force on 1 June this year "Examples" of the maximum content requirements.

In terms of fat content, no fat was detected in seven models, including WatsLife "Dropping Chicken Essence (Original Flavor)", Renhetang X Yuanjinzhuang "Dropping Chicken Essence (Original Flavor)", 3chembio "Chicken Essence Dropping (Original Flavor)", etc.

The Council's tests also found that none of the samples were high in sodium, i.e. containing no more than 300mg of sodium per 100ml, or no more than 600mg of sodium per 100g of solids.

The sodium levels detected in the samples ranged from 67.4 mg to 187.9 mg per 100 ml and 100 mg per 100 g.

Iron is an essential element to maintain normal hematopoietic function and participates in oxygen transport in the body.

Some samples advertise that black-bone chicken contains iron. The test results show that the one with the lowest iron content is Lotto’s “Black-bone Chicken Boiled Essence”, 0.083 mg per 100 ml. and Medicines (Composition and Labelling) Regulations.

The liquid and solid chicken essence with the highest iron content are Tian Yuanxiang "Original Chicken Essence" and Vita Green "Original Chicken Essence". The former contains 0.260 mg per 100 ml, and the latter contains 40 mg per 100 g.

In the latest issue of the selected monthly magazine, chicken essence products with different production methods were tested, and the brands of chicken essence dropped the most.

Tian Yuanxiang's "Original Chicken Essence" is high in iron but low in protein

Protein is also an indispensable nutrient for the human body. Although Tian Yuanxiang's "Original Chicken Essence" ranks the highest in iron content, its protein content is the lowest at 5.3 grams per 100 ml; the highest protein content is Ma Bailiang's "Ten "Six Degrees Extra Thick Boiled Chicken Essence", 12.9 grams per 100 ml, the difference in protein content between the above two is more than 1.4 times.

Is drinking chicken essence effective in supplementing protein?

According to the test, the average protein content of each type of chicken essence (vegetarian chicken essence, traditional chicken essence, dripping chicken essence and boiled chicken essence) ranges from 0.6 grams to 6.3 grams. 18.2 grams and 15.8 grams, and Chia eggs have 6.3 grams per serving. In other words, the protein that can be absorbed by eating a chicken spleen is more than double that of other chicken essence products.

However, the fat content of chicken thighs is relatively high. Each serving of chicken spleen with skin and skinless contains 9.7 grams and 4.9 grams respectively, which is far away from the nearly zero-fat chicken essence.

According to the Consumer Council, the protein in liquid chicken essence is refined under high pressure and high temperature to become "soluble protein", and the fat is removed, so the fat content is less than that of chicken and eggs, and the protein content is more than that of chicken broth, but most of the protein remains in the chicken. In the muscle, so the liquid chicken essence and chicken broth only extract part of the nutrition of the chicken.

As for chicken and eggs, all the protein remains in the meat and eggs.

Some chicken essence products claim to contain a variety of amino acids, including branched-chain amino acids that claim to reduce muscle fatigue. Tian Yuanxiang's "Original Chicken Essence" has the lowest total branched-chain amino acid content, 0.275 grams per 100 ml, and the highest It is Ma Bailiang's "Sixteen Degree Super Thick Boiled Chicken Essence", which contains 0.939 grams per 100 ml, and the difference between the two is about 2.4 times.

The nutrition labels of other products did not match. According to the Consumer Council, the nutrition labels of the 3 samples differed by more than 20% from the test results. Chicken Essence” and Le Dao’s “Black-bone Chicken Boiled Essence” have been listed by the Consumer Council together with the above-mentioned “Normal Temperature Delicious Essence of Chicken—Original Flavor” and China Resources Tang’s “Original Essence of Chicken” which do not list cholesterol content. The information was forwarded to the Center for Food Safety, and the Center for Food Safety found that 1 product was no longer sold in the market; 2 products were suspected of violating relevant labeling regulations and prosecuted.

According to the Consumer Council, traditional chicken essence, dripping chicken essence, boiled chicken essence and vegetarian essence of chicken are health food products, and consumers are advised to pay attention to whether the products meet their nutritional needs.

Normal healthy people, including the elderly, pregnant women or postpartum women, should be able to get enough nutrition as long as they maintain a balanced diet, and should not replace meals with chicken bouillon.

In addition, infants and long-term patients should consult a doctor or a registered dietitian before taking it.

The Consumer Council recommends paying attention to the actual serving size and comparing product prices, carefully reading product descriptions, ingredient lists, serving sizes and nutrition labels on the packaging, and choosing products with lower sodium content as much as possible according to personal eating habits.
