It took a lot of imagination and vision to believe that in the lot used as a steel container parking lot, a winery would be created for glory. Indeed, the new Castel winery complex built at the eight-seater site proves this. The new Castel winery, owned by the Ben Zaken family, was designed by architect Iris Toledano in Hana, in connection with its location in the Judean mountains, near some of the winery's vineyards. The chosen design concept is based on two leading principles.

The first is a complex (complex) design, a complex, which includes several interconnected open-source buildings and passages leading to inner courtyards, similar to a traditional village. These crossings are characterized by stone pillars in which lighting fixtures were incorporated, which create the direction of movement in the complex.

The second principle - an experiential walking route, in which the visitor experiences the entire production process, from the grapes reception at the vintage plaza to the wine tasting in the guestroom. The vintage plaza is paved with grayscale as a central square on one side of the office and management building, and on the other is the production, bottling and storage area with an impressive underground basement.

In the northern part of the winery, the hospitality department, a tasting hall and the winery shop, are located. The guest area includes a stone floor facing the woods and vineyards and ties the building together as a patio which is a pleasant and intimate gathering place. The guest house is shaded by a pergola of Douglas fir trees, which has vegetation on it. The pergola forms the connection to the roofs of adjoining clay tiles, also built of the same tree.

The project combines a traditional winery structure with local Israeli land in various aspects, relationships, proportions, reference to the natural topography, integration into the existing environment and the selection of finishing materials in each area according to its purpose. All these elements together affect the unique atmosphere of the place and the ease of visiting and staying there.

Architect Iris Toledano in Hana has an independent office for architecture and interior design, which she opened in 2004. Iris has 23 years of experience as an architect, project manager and head of planning in architects. Iris is the head of the department of architecture and interior design at Ariel College.
